3/4 cup coarse besan (bengal gram flour)

1/2 tsp coarsely crushed coriander (dhania) seeds

1/2 tsp coarsely crushed fennel seeds (saunf)

1/2 tsp sesame seeds (til)

1/2 tsp carom seeds (ajwain)

1 1/2 tsp sugar

2 tsp curd (dahi)

1/4 tsp turmeric powder (haldi)

1/2 tsp chilli powder

salt and to taste

oil for deep-frying

1. Combine all the ingredients in a deep bowl and mix well.
2. Add enough water and knead into a semi-stiff dough.
3. Divide the dough into 26 portions and shape each portion into 25 mm. (1”) cylindrical long roll.
4. Heat the oil in a deep non-stick pan and deep-fry a few phoolwadis at a time on a medium slow flame till they turn golden brown in colour from both the sides. Drain.
5. Cool completely and store in an air-tight container and use as required.
