Ingredients
1/2 cup coriander (dhania) seeds
4 tsp cumin seeds (jeera)
2 tsp fennel seeds (saunf)
6 cloves (laung / lavang)
2 tsp black peppercorns (kalimirch)
2 small sticks cinnamon (dalchini)
4 black cardamom (badi elaichi)
4 star anise (chakri phool)
4 bayleaves (tejpatta)
1/2 cup grated dry coconut (kopra)
6 whole dry red chillies (pandi) , broken into small piece
2 tbsp sesame seeds (til)
2 tsp black salt (sanchal)
4 tbsp kashmiri red chilli powder
2 tbsp sugar
2 tbsp oil
Direction
combine the coriander seeds
cumin seeds
fennel seeds
cloves
peppercorns
cinnamon
cardamom
star anise and bayleaves in a broad non-stick pan
mix well and dry roast on a medium flame for 1 to 2 minutes.
2. Remove in a big plate and keep aside.
3. In the same broad non-stick pan
add the dry coconut
dry red chillies and sesame seeds and dry roast on a medium flame for 1 minute.
4. Remove in the same plate and allow the mixture to cool completely.
5. Once cooled
add the black salt and red chilli powder.
6. Blend it in a mixer till smooth.
7. Transfer the mixture into a deep bowl
add the sugar and oil and mix well with your hands.
8. Store homemade dabeli masala powder in an air-tight container in the fridge. Use as required.
