Ingredients
1 Lamb rack excess fat trimmed
1 Italian lemon
3 tablespo Extra virgin olive oil
1/4 cup White wine
1 tablespoon Fresh mint leaves chopped
Black peppercorns crushed to taste
Salt to taste
1 1/2 tablespoons Refined flour (maida)
1/2 cup Lamb stock
Fresh parsley sprig for garnish
Direction
2. Add olive oil, white wine, mint leaves, crushed peppercorns and salt and mix. Add lamb chops and juice of ½ Italian lemon, mix and set aside to marinate for 15-20 minutes.
3. Heat a non-stick grill pan and brush with some olive oil. Place the marinated chops in it and grill, turning sides, till fully cooked and evenly done. Remove from pan and set aside.
4. Pour the leftover marinade into the grill pan, add flour, mix and sauté for a minute. Add lamb stock, mix and simmer till the sauce thickens.
5. Strain the sauce into a bowl. Place the lamb chops in a serving bowl and pour the sauce over them. Garnish with parsley and serve hot.
