Ingredients
6 Chicken wings with skin
Oil to deep fry
Salt to taste
Black peppercorns , crushed to taste
1 teaspoon Smoked paprika
1/2 teaspoon Garlic powder
1/2 teaspoon Onion powder
1 teaspoon Lemon juice
1 cup Refined flour (maida)
1/2 cup Rice flour
Fresh parsley leves , chopped to garnish
Barbecue sauce
1 tablespoon Butter
1/2 cup Tomato ketchup
1 tablespoon Worcestershire sauce
1/2 teaspoon Onion powder
1/2 teaspoon Garlic powder
Black peppercorns , crushed to taste
1 teaspoon English mustard paste
1 1/2 teaspoons Brown sugar
1 teaspoon Tabasco sauce
4-5 tablespoons Chicken stock
1/2 teaspoon Smoked paprika
Direction
2. Add 2-3 tablespoons chicken stock and mix well. Add paprika, remaining brown sugar and remaining chicken stock, mix and cook on low heat for 8-10 minutes, stirring occasionally. Remove from heat.
3. Take chicken wings in a bowl. Add salt, crushed peppercorns, ½ teaspoon paprika, garlic powder, onion powder and lemon juice and rub in well. Set aside to marinate for 15-20 minutes.
4. Heat sufficient oil in a kadai.
5. Mix together refined flour, rice flour, remaining paprika and salt on a plate.
6. Coat the marinated chicken wings with the flour mixture. Slide the chicken wings into hot oil and deep-fry till golden brown and crisp. Drain on absorbent paper.
7. Add fried chicken wings to the barbecue sauce and mix well. Place the pan back on heat and cook for 2-3 minutes.
8. Arrange the chicken wings on a serving platter and serve hot garnished with parsley.
